A Really Good Cake

4 eggs
2 cups white sugar
1 container plain yogurt
1/2 cup vegetable oil
1 cup all-purpose flour
1 cup whole wheat flour
2 teaspoons ground cinnamon
1 teaspoon salt
2 teaspoons baking powder
1 teaspoon baking soda
1 (16 ounce) can crushed pineapple, drained
2 cups grated zucchini

Mix ingredients and bake at 325 for 60 minutes. Frost.

Spicy Beef Patties

These were really good:

* 1 pound ground beef
* 3 green onions, minced
* 4 cloves garlic, minced
* 1 tablespoon curry powder
* 1/4 teaspoon dried red pepper flakes
* salt and pepper to taste

Bake at 400 for about 45 minutes.

Matzah Ball Soup

Yes, I cheat and use the boxed mix. But I add to it: green onions, celery, carrot, and chicken. Diced finely.

Roasted Sausage and Vegetables

In a large mixing bowl, stir one packet of onion soup mix with 1/4c olive oil and 1/2c water.

Add:
2 lbs. diced potatoes
1/2 lb. diced carrots
1 lb. diced sausage

Stir and put into casserole pan.

Cook at 425 for about 45 minutes, stirring once in the middle.

Serve with a salad.

Tortilla Soup

In the crock pot on low for four hours:

2 cups diced cooked turkey or chicken or ground beef
1 can diced tomatoes
1 large can enchilada sauce
1 diced onion
1 can of diced green chilies
2 t diced garlic
4 cups water
1 T chicken boullion
1 bag frozen corn

Crush tortilla chips over the top before serving.

Quiche

Spray Pam in a 9x13 casserole dish. Fill with (still-frozen) battered French fried, diced ham, and diced broccoli. In a bowl, beat 12 eggs and pour in the dish. Bake at 325 for about an hour. Yum.
