Shrimp Salad

In a bowl, combine 3 diced green onions, grape tomatoes, diced red bell pepper, chickpeas, basil, and dill.

In a pan, combine 2 T olive oil, 3 T butter, 1/2 pound shrimp, sweet chili sauce, and garlic.

In individual serving bowls, layer spinach leaves, cold ingredients, hot ingredients, and sprinkle top with feta.

Pasta Salad

We love this.

one pound cooked whole wheat pasta
one pound bag of frozen vegetables
about a cup of meat
salad dressing

(You can "cook" the vegetables by putting them in the strainer before you drain the pasta.)

Homemade Hot Pockets

These are so good:

one loaf of half whole wheat half white dough made in bread machine
ham
cheese

(1) Preheat oven to 350.
(2) Divide the dough into three pieces and roll out to 10-inch rounds.
(3) Put two slices of cheese and three slices of ham so they cover half the bread.
(4) Fold the dough over and pinch the edges.
(5) Bakes about 10 minutes on each side.

I like mine dipped in honey mustard.

Taco Soup

Put in slow cooker:

1 pound cooked ground beef
1 can chili-ready diced tomatoes
1 handful dry pinto beans
1/2 bag frozen corn
1 diced onion
1 can enchilada sauce
2 cups of water
1 can chopped green chilies
garlic


Cook on low for 8 hours. After filling a bowl, stir in one spoonful of sour cream.

Easy Chicken

Not entirely sure this counts as a recipe, but . . .

. . . put three still-frozen chicken breasts in the crockpot along with half a bottle of salad dressing. Cook on high for five hours. Remove chicken, stir in a bag of frozen vegetables, and cook for about a half hour. Serve over rice.

Coleslaw

This is barely a recipe, but it is such a good side-dish for a meal that is otherwise kind of heavy:

one bag cole slaw mix
any kind of salad dressing--I prefer oil-based ones to creamy ones

Lasagna

S. will cook this . . . and then eat half of the pan.

1 pound Italian sausage, cooked
1 container ricotta
2 eggs
1/2 cup Parmesan
1 and 1/2 cups mozzarella
one box uncooked lasagna noodles
one jar spaghetti sauce
two cans diced tomatoes

In a bowl, mix the sausage, sauce, and tomatoes. In another bowl, mix the ricotta, eggs, Parmesan, and mozzarella. Beginning with the sauce, layer the noodles, cheese, and sauce in the pan. Cover with foil sprayed with cooking spray. Bake in a 400 degree oven for one hour and then allow to sit for ten minutes.
